By moving fast hot air past the food, convection ovens can operate at a lower temperature than a standard conventional oven and yet cook food more quickly. The air circulation, or convection, tends to eliminate "hot spots" and thus food may bake more evenly.

A local Restaurant Equipment Technician inspected this item and he found that the controls appear to be working, the indicator lights are working, and that the item is heating and functioning as designed.
This item has some minor cosmetic imperfections from use, including scratches,dents,dings and some interior discoloration.
This item weighs 911 lbs. but we have added 50 lbs. to the weight for packing and shipping.
