Commercial exhaust fans vent air from your kitchen to the outside. They can be mounted either on the roof or a wall, depending on the requirements of your kitchen, and are available in either upblast or downblast varieties.
Make-up air fans pull fresh air from the outside into your kitchen, replacing the air pushed out by the exhaust fan. It's important to mount them in a place where they will not be recirculating exhaust back into the kitchen.

What should I know about exhaust fans and make-up air?
You should be aware that your buildings insulation will affect air pressure. A "leaky" building is less
likely to create negative air pressure than a "tight" or well-insulated building. Negative air pressure
can cause your fan to function less effectively.
