Getting to Know Dough Proofers

Kitchen Applications: Proofers are an essential piece of equipment for all sizes of bakeries because they provide uniform proofing (dough rising) by mixing heat and humidity (activated by the jetspray or water pans) from batch to batch for products such as croissants, breads, bagels, donuts, rolls, and Danishes.

Types: A Mobile Proofer is a smaller proofer on casters. A Roll-in Proofer is hooked up to water to provide an automatic humidity jetspray; other models require water pans to be filled and placed at the bottom to provide continual humidity. A Retarder Proofer includes a refrigerator with a programmable timer to turn the machine into a proofer at suitable time.

Standard Features: Dough proofers are thermally insulated enclosures where the air temperature and air moisture should be kept at a consistent level. The dough proofer is heated by steam coils or electric heating elements located inside the enclosure. Moisture is added to the air manually via water pans, or automatically via by with a direct water hose feed. Fans in the proofer circulate the air. Most proofers require operators to turn pans half way through the process to ensure even baking.

Unique Features: The JAOP Series from Doyon Baking Equipment has a unique and patented Jet Air System. The air moves in one direction for 2.5 minutes, stops for 25 seconds than moves the other way for 2.5 minutes resulting in a 30% to 65% softer velocity air flow for consistent baking. This system bakes faster and more evenly without having to turn the pans halfway through the baking time.

Capacity: Most manufacturers offer a modular design to enable customers to order a proofer with specific rack capacity requirements or fit into limited available space. Available in single, double or triple wide with multiple shelves and assorted rack capacity depths to accommodate various production requirements.

Energy Source: Models use either single-phase 110-120 volts electricity or natural gas.

Temperature Range: Models have either a manual or automatic thermostat, with a variable temperature range between 150F to 600F that allows the baking temperature to be reached in 15 minutes.

Construction: Proofers are typically constructed of heavy-duty stainless steel with an aluminum floor. Selecting a brand that provides a clear viewing window in the door will allow you to easily monitor the progression of your products.

Maintenance: Some manufacturers provide trained technicians to perform on-site service.
