The Doyon AEF035 is an industrial-grade, freestanding spiral dough mixer engineered specifically to anchor high-output bakeries, pizzerias, and commercial kitchens requiring intensive, large-scale dough development. Featuring a robust 75-quart stainless steel bowl, this heavy-duty workhorse is designed to effortlessly blend and knead up to 120 lbs of high-hydration dough. Unlike standard planetary mixers, the AEF035 utilizes a synchronized rotation system where both the spiral hook and the bowl spin simultaneously. This unique dual-rotation action forces the dough against the side of the bowl, maximizing oxygenation, accelerating gluten structure development, and critically preventing the over-kneading or friction-heating that can kill yeast viability. Built with a heavy-duty cast iron frame covered in a durable, lead-free enamel coating, this NSF-certified floor model provides exceptional stability and vibration-free operation under the most grueling intensive mixing cycles.
