The Doyon DL12DP is a high-performance, countertop two-stage dough sheeter designed specifically for high-volume pizzerias, bakeries, and restaurants requiring perfectly round crusts. Unlike single-roller models, the DL12DP features a two-roller configuration with an angled top roller that automatically performs a two-pass operation. A single operator drops the dough into the top chute where it is flattened into an oval, drops onto a motorized internal turntable that rotates the dough 90 degrees, and automatically feeds it through the bottom rollers. This automated cross-sheeting process eliminates manual turning, allowing the unit to roll up to 600 uniform, round pieces per hour up to 12 inches in diameter. Powered by a heavy-duty 1/2 HP motor and constructed from durable stainless steel with adjustable chrome rollers, the DL12DP maximizes back-of-house efficiency, significantly reduces labor costs, and ensures consistent thickness for pizza crusts, pie shells, and flatbreads.

For best results, Doyon recommends using room temperature dough between 50-60% hydration.
