The Doyon DL18DP is a premier countertop two-stage dough sheeter engineered to automate and optimize the production of large, perfectly round dough crusts up to 18 inches in diameter. Driven by a powerful, maintenance-free 1/2 HP motor and wrapped in a rugged stainless steel frame, this high-efficiency machine features a unique two-roller design with an angled top roller to execute a seamless cross-sheeting process. When an operator drops a dough ball into the top chute, it passes through the first set of chrome steel rollers to form an oblong shape, lands on a motorized internal turntable that automatically rotates the dough 90 degrees, and feeds it directly through the bottom rollers. This completely eliminates the manual labor of catching and turning the dough by hand, allowing a single operator to efficiently output up to 600 uniform pieces per hour. Capable of handling dough portions ranging from 1 to 28 ounces with easily adjustable thickness settings, the DL18DP is an indispensable, labor-saving asset for high-volume pizzerias, bakeries, and commercial kitchens demanding strict consistency for large pizzas, specialty flatbreads, and pie shells.
For best results, Doyon recommends using room temperature dough between 50-60% hydration.
