Powered by heavy-duty 7.5 kW heating elements, this single-deck standard-depth convection oven features a 150°F to 550°F temperature range, a 140°F to 200°F "Hold" thermostat mode, and "Rack" mode programming that allows operators to run multiple timed food items simultaneously. Built with a rugged stainless steel exterior and a fastener-free porcelain enamel interior, the PCE75S/TI-V utilizes a two-speed 1/2 HP fan motor to drive uniform forced-air circulation across 11 rack guide positions, ensuring fast preheat cycles, immediate recovery times, and consistent sheet-pan yields.
By incorporating an integrated ventless setup, the Southbend PCE75S/TI-V frees commercial kitchens from the prohibitive capital expenditure of Type 1 and Type 2 exhaust hood systems. Installing traditional commercial kitchen hood infrastructure, ducting, and makeup air units can add tens of thousands of dollars to buildout costs—expenses that are eliminated with a certified ventless commercial convection oven. Eliminating external venting also reduces ongoing HVAC energy consumption by keeping climate-controlled air inside the building during operation. This self-contained footprint allows operators in non-traditional foodservice locations—such as food trucks, ghost kitchens, convenience stores, retail kiosks, airports, and leased commercial properties—to add high-volume cooking capacity without requiring structural building modifications or expensive mechanical permits.
The core mechanism behind the Southbend PCE75S/TI-V ventless system is an internal catalytic converter designed to capture and eliminate grease vapors, smoke particles, and cooking odors. Placed directly inside the internal airflow loop, the catalyst consists of a durable matrix coated with specialized oxidizing materials. As the internal blower circulates heated air through the baking cavity, airborne grease molecules pass through the catalytic core, triggering a thermal oxidation reaction that decomposes organic contaminants into harmless carbon dioxide and water vapor before air vents out. Because this catalytic process operates continuously without relying on consumable drop-in filters, kitchen staff experience uninterrupted airflow, low-maintenance operation, and clean ambient air quality throughout peak production shifts.
