The Cayenne® Model 2001 Drop-in Warmers can be used as either a countertop or drop-in warmer. The unit has a stainless steel well and exterior, and is designed for moist or dry operation.
Cayenne® Model 2001 Drop-in Warmers are designed to hold heated prepared foods at temperatures above the HACCP “danger zone” of 140º F (60º C). The performance standard is measured using the NSF mixture preheated to 165º F (73.9º C). The unit will hold the temperature of this product above 150º F (65.6º C). The temperature will be maintained best when the food product is held using pans with covers, the proper water level is maintained in the well, and the food product is stirred regularly.
