Doyon Baking Equipment DL18P Specifications
The Doyon DL18P can sheet 1 to 28 ounces of dough up to 17" wide for tortillas, wraps, flat bread and more. It is a one stage sheeter with a front infeed and discharge and produces a uniform thickness. This counter-top dough sheeter features an ergonomic design and a pair of parallel rollers to enable a single operator to make up to 600 pieces in an hour. This efficient sheeter reduces labor cost by being able to roll dough 6 times faster than rolling by hand.

The Wave of the Future
Pros: Sharp looking Easy to clean AND easy to clean UNDER! Quiet Speedy Easy to adjust Very low maintenance
Cons: The 17" unit is a bit tall. If you have short cooks they will have to stretch a bit.
I was initially attracted by the small footprint of this unit. It takes up very little counter space and can be lifted by a single person for cleaning. The unit performs as well as any traditional roller. Excellent speed, uniform thickness. Adjustments are done with a simple flip of the bar and they lock in automatically. No more twisting knobs and sliding transmission bars. I would especially recommend this roller if you have a production area visible to your customers. The unit is very clean and attractive looking. It is very quiet and won't be a distraction to customers. The visual aspect of the rolling will be a positive addition to the theater of the pie. If you are replacing a roller or moving to a more visual production method, this is the roller for you.
