It controls water temperature so that it's the same as the food it's holding. You can fry chicken crispy, and with this unit it will stay crispy until ready to serve! It holds 20lbs. of food for each drawer and can accommodate 1 full steam table pan (6" (152 mm) deep), 2 half steam table pans, 3 third steam table pans, or 1 1/1 gastronorm pans. This unit is also UL listed for use.
